Aspen’s MOLLIE garners a fresh design and community spaces

The Molly Gibson hotel redevelopment, the MOLLIE, opened on Main Street in Aspen just in time for the holidays with a fresh feel, corrected spelling of its namesake, and gathering spaces for residents and hotel guests alike.

While it’s been open for nearly a month now, having had the ribbon cut for opening day on December 23, 2023, the project took nearly 15 years to complete, accounting for planning and permitting, and consisted of a full demolition and redevelopment of the new boutique hotel, included 68 guestrooms, 1 unit of affordable housing, and 2 single family free-market units on the lot beneath the old Molly Gibson hotel.

The name of the 1950s hotel also saw a refresh, being updated to reflect the correct spelling of the famous Mollie Gibson Mine. The mine was one of Aspen’s most productive silver mines in the 19th century and the owner of the mine, Henry Gillespie, named the mine after his sister, Mrs. Mollie Gibson.

The interior design embodies both Japanese and Scandinavian aspects, providing warmth and inviting minimalism, calm, and quiet to be enjoyed by guests of the common spaces. Of those spaces, I had to try the coffee bar first and can attest, their black Americano is smooth & delicious, and the coffee bar feels as warm and inviting as the espresso in my black ceramic mug.

I’ve yet to experience the bar and restaurant but am curious to try the Western Waltz Milk Punch and the MOLLIE burger from their cocktail and dinner menus. I’m also anticipating the rooftop terrace/ pool & spa area, opening Spring 2024, to provide beautiful views amongst which to enjoy an afternoon cocktail (or coffee if you’re anything like me).

Whether as a hotel guest or patron, add The Mollie to the list for your next visit to town, if only to experience the rarefied sense of hygge not often found in this little place called Aspen.
